Almond Joy Protein Balls


I almost always have a batch of protein balls on hand for a quick snack or sweet treat. This recipe is a good substitute if you love chocolate like I do. Tastes just like a fudgey almond joy bar. Okay, maybe not exactly but pretty close!


Ingredients:

  • 1/2 cup almonds

  • 5 medjool dates

  • 2 tbsp coconut butter (could sub with almond butter or a tbsp of coconut oil)

  • 2 scoops plant based protein

  • 2 tbsp cocoa powder

  • 1 tsp vanilla extract

  • Pinch sea salt

  • Coconut shreds for rolling


Method:

Combine all ingredients together in a food processor and blend. Add in about 1/4 cup of warm water to get a nice doughy consistency, Roll into balls and then into coconut shreds. Refrigerate.
