Cauliflower Tabbouleh and the Best Hummus Ever

One of my favourites from the Whole Foods bar in downtown Los Angeles was the cauliflower tabbouleh. This salad makes an awesome side dish or you can make it a meal with some added protein and a tablespoon or two of hummus for balanced meal. Making your own hummus is cheaper than buying store bought and tastes so much better! Try it for dinner tonight!

Cauliflower Tabbouleh:


1 head of cauliflower riced in a food processor

1 tomato, diced

1/2 red onion, diced

1 handful parsley, finely chopped

1 handful mint, finely chopped


2 tbs olive oil

Juice of 1 lime

Salt and pepper


Combine all ingredients in a bowl and toss with dressing.

The Best and Easiest Hummus:


1 can chickpeas, drained and rinsed

2 cloves of garlic

2 tbs tahini

2 tbs olive oil

Handful of parsley

Salt and pepper to taste


Combine all ingredients into a food processor and blend until smooth. May have to add a tbsp or two or water to blend.
