Creamy Coconut Chia Pudding

Chia seeds are one of my favorite super foods. I love adding them to my breakfast as they are loaded with good fats and protein that will keep me full. This pudding is easy to make the night before work or school. Sometimes I add a scoop of protein powder and banana and have it as a post workout meal. This is a base recipe and you can add whichever toppings you like. The variations are endless! Blueberry and lemon, strawberries and almond butter, banana and cacao nibs... You could also add it to smoothies or oatmeal. So yummy!


Creamy Coconut Chia Pudding


Ingredients:

  • 1 cup coconut milk

  • 1/4 cup chia seeds

  • 3 tbsp of nut milk

  • 2 tbsp of maple syrup

Method:

Mix ingredients in an airtight container (I like using a mason jar the best!) and refrigerate for an hour or overnight.
