Crunchy Veggie Slaw with a Creamy Ginger Dressing

This was my dad's creation: veggie slaw with a creamy ginger dressing. It was definitely a nice change from the usual green leafy salads. This was crunchy, satisfying and definitely a hit at our family Sunday night dinner!

Crunchy Veggie Slaw


  • 1 head of purple cabbage, shredded

  • 2 carrots peeled anc chopped

  • 1 red pepper, julienned

  • 1 yellow pepper, julienned

  • 1 bunch cilantro

  • 1/2 red onion, diced

  • 1/2 cup chopped almonds or cashews


Add all ingredients into a bowl and serve with dressing. This would also pair well with my turmeric dressing.

Creamy Ginger Dressing


  • 1/2 cup olive oil

  • 1/4 cup greek yogourt (leave out if vegan or try unsweetened coconut yogurt)

  • 1 clove of garlic

  • 1/2 thumb sized piece of ginger

  • 2 tbsp rice wine vinegar

  • 2 tsp honey

  • Sea salt and pepper to taste


Blend all ingredients together in a blender.

Pair this salad with a lean protein like fish or chicken (we had homemade veggie burgers!) and a complex carb like quinoa for a nourishing meal. Oh and we can't leave out the avocado!
