Mango Quinoa Salad


I absolutely love adding fruit into my salad, especially during the summer when it is hot out! Mango adds the perfect amount of sweetness. This salad is perfect to take to a barbecue or make for lunches during the week. Pair with your favorite protein for light summer dinner.


Ingredients:

  • 1.5 cups cooked quinoa

  • 1/2 of a small mango

  • 1 stalk of celery

  • 1/2 small red onion

  • 1 cup cherry tomatoes

  • 2 kale stems

  • 1 small handful of cilantro

  • Juice of one lime

  • Olive oil


Method:

Dice all veggies and mangoes into small bite sized pieces. Combine quinoa and veggies in a bowl and drizzle with 1-2 tbsp of olive oil, the juice of one lime and salt and pepper to taste. Serve with sliced avocado and extra mango pieces.
