No Bake Breakfast Brownies
These no bake brownies are perfect if you are on the go in the morning and pressed for time. They are loaded with protein, healthy fats and fiber to keep you feeling full. I love having one with my morning coffee! Make a batch on Sunday so you have a quick and easy breakfast or snack option! Make a double batch and thank me later!
5 medjool dates
1 scoop chocolate vegan protein powder*
1/2 cup nuts (I used a mix of almonds and cashews)
1 tbsp almond butter
1 tbsp hemp hearts
2 tsp vanilla
1 tsp sea salt
Optional toppings: cacao nibs, dark chocolate chips, coconut, hemp hearts, buckwheat.
Add all ingredients into a food processor and add in 2-3 tbsp of warm water. Scrape down the sides as you go. You may have to add more water depending on what kind of protein powder you use. Add just enough so a soft dough forms. Spoon mixture into a small pan (I used a bread pan) and spread batter out evenly. Add your favorite toppings! I like cacao nibs, coconut and a bit of extra sea salt. Refrigerate and enjoy!
*You can use which ever protein powder you like. I like vegan protein the best in bars as sometimes whey can come out a little sticky but I have used both and works fine!
I would make a double batch! Trust me you'll want to as one doesn't last very long!! One batch makes about 4 decent sized brownies.
