Is there anything better than fluffy pancakes on the weekend? My dad used to make pancakes every Sunday, so definitely a comfort food for me. My quest for a good protein pancake has been a long one. Depending on the protein you use, they can come out tasting dry and like cardboard. My favourite protein powders for baking are plant based (pea or rice protein or a blend). This recipe is gluten free, dairy free and paleo. It's made with cassava flour, which is similar to wheat flour and makes these pancakes nice and fluffy. You can get it in your specialty grocery or health food store. If you can't find it, just use all almond or coconut flour instead.
Paleo Protein Pancakes
3/4 cup almond milk
Combine all dry ingredients in a bowl. Mix in wet ingredients and stir until there are no clumps. Add more almond milk if mixture is too thick. Cook on a hot skillet. The key is to not over cook it so watch them closely!
Add your favourite toppings. I love nut butter or coconut butter, banana or fresh berries. Sometimes I even add dark chocolate pieces to the batter!
