Low Carb Side Dishes

Next time you are making dinner and want a couple of easy side dishes, try these two! They are so easy to make and a good way to sneak in more vegetables. As a nutritionist, I always recommend having half of your plate filled with veggies. This keeps you feeling more full!

 

Try these simple and easy side dishes for dinner tonight:

 

Broccoli Pilaf:

 

Ingredients:

  • 1 head broccoli, pulsed in food processor until rice like

  • 1/2 white onion, diced

  • 2 cloves of garlic

  • Salt and pepper to taste

  • Chilli pepper to taste

Method:

Saute onion and garlic in pan with a little bit of olive oil. Cook until soft. Add in broccoli and cook for 2-3 minutes. Season with salt, pepper and red chilli flakes. 

 

This is your basic recipe so you can spice it up however you like. Add in fresh herbs or a splash of tamari for some flavour. Top it off with nuts or seeds. You can also substitute with cauliflower!

 

Zucchini Noodles with Dairy Free Pesto

 

Pesto Sauce:

  • 1/2 cup sun dried tomatoes packed in oil

  • Handful of fresh basil

  • 2 tbsp olive oil

  • 2 cloves of garlic

Zoodles:

  • 3 small zucchinis, spiralized or ribboned with a peeler

Method:

Add all ingredients for the pesto sauce into a food processor or blender and blend until smooth. You might have to add a tablespoon or two of water to thin it out. 

 

Saute zoodles in a pan for 2-3 minutes. Top with pesto sauce and serve!
