I typically put hummus on just about everything so this black bean dip was the perfect way to switch things up. I didn't have any chick peas on hand so decided to use a can of black beans instead. Super filling, full of fibre and protein making the perfect snack. I love this dip with some rice crackers, sliced veggies or slathered onto some sourdough and topped with avocado for a quick and delicious snack or smaller meal.
1 can organic black beans, drained and rinsed
1 clove of garlic
Juice of one lemon
2 tbsp olive oil
1 heaped tablespoon of tahini
1/2 of a zucchini, cut into small pieces
1 small handful of parsley
1/2 tsp cumin
Salt and pepper to taste
2 tbsp water
Combine all ingredients in a blender or food processor and blend until smooth. Add more water for desired consistency!
