Greek Tabbouleh

Summer time means fresh and light salads. Tabbouleh is one of my favourite salads to make for bbqs and pot lucks. It's simple and filling and pairs perfectly with a protein like chicken or fish. Top it with a scoop of hummus for the perfect meal!

 

Ingredients:

  • 1.5 cups cooked quinoa

  • 1/2 cucumber

  • 1 small tomato

  • 1/2 red onion

  • small handful of both mint and parsley

  • Juice of a whole lime

  • Salt and pepper to taste

 

 

Method:

Cook quinoa according to instructions on package. Dice veggies up into small pieces. Finely chop mint and parsley. Combine all ingredient into a large bowl, drizzle with lime juice and add salt and pepper to taste.
