These are basically a rendition of my no bake breakfast brownies that I posted the other day which were a hit! These bars were so good. I literally made a batch two days in a row. They didn't last long in my house. They make the perfect afternoon treat or grab one for breakfast!
4 medjool dates (de-pitted)
1 scoop vanilla protein (I used Garden of Life raw vegan protein)
1/2 cup nuts (I used cashews but any nut will do)
1 tsp vanilla
1 tbsp hemp hearts
1 tbsp almond butter
1 tsp cinnamon
1/2 tsp salt
Combine all ingredients in food processor and add in 3 tablespoons of warm water. Blend until a soft dough forms. You may have to add in more water depending on the protein you use. Mix in 2 tbsp of cacao nibs or dark chocolate chips. Press into small pan (I used a bread pan) and top with shredded coconut.
Again, I would definitely double to batch! You'll get about 8 good sized bars if you double up the recipe.
