Chocolate Covered Strawberry Overnight Oats

There is nothing better than fresh, ripe strawberries in the summer time. And what goes with strawberries? Chocolate! These oats make a perfect summer breakfast that is easy to meal prep and takes about 5 minutes to make.

Why Oats are Good for Breakfast

Aside from their delightful taste, these overnight oats pack a punch when it comes to nutrition. Rolled oats are an excellent source of fiber, promoting healthy digestion and keeping you full until lunchtime. Chia seeds add a boost of omega-3 fatty acids and additional fiber, making this breakfast choice heart-healthy. Furthermore, Greek yogurt contributes to a protein-rich breakfast, helping to stabilize blood sugar levels and sustain energy throughout the day.

Customize to Your Liking:

One of the best things about overnight oats is their versatility. You can customize them to suit your preferences and dietary requirements. Here are some ideas:

  • Nutty Twist: Add some chopped almonds, walnuts, or hazelnuts to add a delightful crunch and extra nutrition.

  • Coconut Lover: Sprinkle shredded coconut over the oats for a tropical touch.

  • Vegan Option: Use plant-based milk and yogurt to make the recipe vegan-friendly.

  • Protein Boost: Stir in a scoop of your favorite protein powder for an extra protein punch.

Substitutions in Overnight Oats

Coconut Milk: Coconut milk is the star ingredient in these oats. I used full fat coconut milk from a can and blended it until smooth. The fat in the coconut milk makes these oats super creamy and filling. You could use other nut milks like cashew or oat milk as well but the texture won’t be as creamy.

Chia Seeds: Chia seeds add some fat and fibre to these oats. Feel free to sub with ground flaxseeds or hemphearts.

Greek Yogurt: Swap with coconut yogurt for a plant based version.

Chocolate Covered Strawberry Overnight Oats

Ingredients: Makes 3 servings

  • 1 cup full fat coconut milk from a can (make sure to blend it first)

  • 1 cup Greek yogurt

  • 1 cup strawberries, washed

  • 2-3 tbsps maple syrup

  • 1.5 cups rolled oats

  • 3 tbsps chia seeds

  • 1 cup chopped fresh strawberries

  • 3 oz dark chocolate or chocolate chips

Method

  1. In a blender combine coconut milk, greek yogurt, one cup of strawberries and maple syrup. Blend until smooth.

  2. Add 1/2 cup of rolled oats to a mason jar or sealable container along with one tablespoon of chia seeds.

  3. Divide milk and chopped strawberries among jars evenly and stir well to combine.

  4. Store in the refridgerator overnight or for at least 3 hours.

  5. When the oats are set, you can add in a touch more milk if they seem too thick.

  6. Melt dark chocolate in the microwave for 20 seconds. Stir well and microwave for another 10 second, being careful not to burn it.

  7. Make sure the tops of the oats are smoothed out. Pour over dark chocolate, enough to cover the top of oats. Pop back in the refrigerator for 5-10 mines to let the chocoalte set and harden.
