Easy Meal Prep Broccoli and Quinoa Salad

Need an easy meal prep idea? I got you! This easy broccoli and quinoa salad is amazing to make ahead for weekday lunches. It stays good in the fridge for up to 4 days.

This salad is balanced with protein, fat and fibre making it a good choice for lunch. This combination helps you to stay full and prevent those afternoon slumps and sugar cravings.

Why this Salad Works

Quinoa: A plant based grain that is full of fibre and protein, making it a good option to fuel you for the day.

Chickpeas: A great source of fibre and protein to help stabilize blood sugar and keep you satisfied.

Broccoli: Full of vitamins and minerals like vitamin a and c, iron and potassium. The added fibre also helps keep you satisfied.

Healthy fats: A vinegrette made with health oils and vinegar can provide essential omega 3 fatty acids that help to reduce inflammation. Adding vinegar to meals can also slow down how fast our stomach empties, regulating blood sugar and managing sugar cravings.

Add Protein to Your Salad

To make this meal more satiating, add an easy protein source.

A few of my favourite go to’s are:

  • Hard boiled eggs

  • Canned tuna or salmon

  • Grilled or roasted chicken breast

  • Low sodium and nitrate free turkey or chicken breast

How to Store Broccoli and Quinoa Salad

This salad stays well in the fridge for up to 4 days. I had for dinner one night and then the rest for lunches for a few days. You can add a splash more of vinegar or oil if it feels dry or you need to brighten it up.

Broccoli and Quinoa Salad

Salad ingredients:
1.5 cups cooked quinoa
1 cup chickpeas
1/2 cucumber, diced
1 cup broccoli, chopped
1/2 onion, diced
1/4 cup walnuts
1/4 cup dried cranberries or dates
1/4 cup crumbled feta

For the dressing:
2 tbsps olive oil
1 tbsp red wine vinegar
2 tsp maple syrup
2 tsp Dijon mustard
Salt and pepper to taste

Directions:
Add all salad ingredients together in a large bowl and toss.

For the dressing, mix all ingredients together in a small bowl and drizzle over salad. Toss to combine.
