Double Chocolate Zucchini Bread

Is there anything better than ooey gooey, moist chocolate chip zucchini bread? I think not! My partner and I planed a garden this year and unfortunately most things didn’t grow due to the high heat here in Saskatchewan but our zucchinis made it! You guys know how much I love making my banana bread but this one hits differently!

I love having a piece for breaky with some full fat greek yogurt and a drizzle of nut butter. My partner had it warmed up and served with ice cream! Yum!

You have to try this simple recipe!

Double Chocolate Zucchini Bread

Dry Ingredients

  • 1 and 1/2 cups oat flour (just grind whole oats in a blender or food processor)

  • 1/3 cups cocoa powder

  • 1/2 cup coconut or brown sugar

  • 1/2 tsp baking power

  • 1/2 tsp baking soda

  • 1/8 tsp salt

Wet Ingredients

  • 2 eggs

  • 1/4 cup coconut or avocado oil

  • 1/3 cup unsweetened nut milk

  • 1 tsp vanilla extract

  • 2 cups shredded zucchini

  • 1 cup dark chocolate chips

Method:

Preheat over to 350 degrees. Line a bread pan with parchment or grease with oil so it doesn’t stick.

Combing all dry ingredients together in a large bowl. Mix well until there are no longer any clumps. In a medium sized bowl, whisk eggs and add in oil, milk, vanilla and zucchini. Mix well, pour into dry ingredients and combine until there are no large clumps. Fold in chocolate chips.

Pour batter into greased or parchment lined bread pan and bake for 45-50 minutes or until a tooth pick comes out clean. Allow to cool fully. Serve with nut butter or warmed up with some dairy free ice cream!
