Healthy Vegan Peanut Butter Cookies
Is there anything better than a cookie? These cookies are made with whole food ingredients and are loaded with fat and fibre so they won’t spike your blood sugar. You might want to make a double batch! Perfect for an afternoon or post dinner sweet treat.
Healthy Vegan Peanut Butter Cookies
Yields: 6 small cookies
Recipe:
1 cup oat flour (grind oats in a blender)
2 tbsps ground flax
1 tbsp chia seeds
1/4 tsp sea salt
1/4 cup peanut butter
1/4 cup maple syrup
1/2 tsp cinnamon
Method:
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Combine all ingredients in a bowl and mix together well. Roll the dough into 6 balls and line on baking tray. Press down with a fork and bake for 10 minutes.
