The BEST and Easiest Gingerbread Pancakes

Happy holidays everyone! I hope everyone is having a good holiday season. I've been enjoying my time off sleeping in, drinking coffee and making pancakes!

You guys need to try these for Christmas. I'm sure you have all the ingredients left over from making gingerbread to make these fluffy and moist pancakes. Make them Christmas morning for breakfast with your family. They will love them!

Gingerbread Pancakes:

Makes six medium sized pancakes.

Dry:

  • 1 cup oat flour (blend rolled oats in a blender or food processor until fine)

  • 2 tbsps ground flaxseeds or chia seeds

  • 1 tsp baking powder

  • 2 tsps pumpkin pie spice (or sub a mix cinnamon, nutmeg and ginger)

  • 1/8 tsp salt

Wet:

  • 1 mashed banana

  • 2 eggs

  • 1/4 cup almond milk

  • 2 tbsp fancy molasses (or 1 tbsp of blackstrap)

  • 1 tbsp olive or coconut oil

Mix dry ingredients together in a bowl. In a separate medium sized bowl mash the banana and add in eggs, milk and oil. Stir together well and add to dry ingredients. Mix until no longer clumpy. Let the batter sit for a couple of minutes to thicken. Heat a frying pan on medium heat and grease with olive or coconut oil. Cook pancakes for 3 mins or until bubbling and flip. Serve with coconut whip and maple syrup!
