Ingredients
Serves 1
1/2 cup cottage cheese
1-2 tbsps of maple syrup
1/2 tsp vanilla bean paste or vanilla extract
Slice of bread (I used sourdough)
1 fresh peach or nectarine
1 tbsp hemp hearts
Chopped fresh mint
Method:
In a blender combine cottage cheese, maple syrup and vanilla and blend until smooth. Taste to make sure it is sweet enough for you. Add more syrup to taste if desired.
Toast bread. Top with blended cottage cheese mixture and sliced peaches. Sprinkle over hemp hearts and chopped mint.
