Chocolate Covered Strawberry Chia Pudding

Want a yummy and healthy recipe to make for Valentine’s Day? Look no further than this chocolate covered strawberry chia seed pudding! Creamy, decadent and loaded with protein and fiber, this makes a great option for breakfast, snack or dessert.

This is the perfect recipe to add to your meal prep rotation. I love making a batch on Sundays to have for easy breakfasts or snacks throughout the week.

Ingredients in Chia Pudding

Coconut Milk: This is a must as it makes this pudding super rich and decadent. You will want the stuff from a can. Light coconut milk also works well in this recipe.

Chia Seeds: These seeds are a powerhouse packed with protein, fiber and healthy fats to support balanced blood sugar.

Protein Powder: Use whichever protein powder you like, both vegan and whey works. I used whey in this recipe.

Cocoa or Cacao Powder: For added nutrition and antioxidants use cacao powder. Cocoa powder works in a pinch as well for a richer chocolate flavour.

Toppings: I added strawberries and dark chocolate chunks but feel free to get creative here! Banana, oranges, different types of nuts and seeds or coconut flakes would be great additions.

How to Make Chocolate Covered Strawberry Chia Pudding

One of the reasons I love this recipe so much is you can throw everything into a bowl, give a good stir and set in the fridge.

I like to let the chia pudding sit out at room temperate for about an hour before putting it in the fridge to set.

Chocolate Covered Strawberry Chia Pudding

Makes about 4 servings

Ingredients:

  • 1 can full fat coconut milk

  • 1 cup unsweetened almond milk

  • 2 scoops of chocolate protein powder (can use vanilla, just add more cocoa powder)

  • 1/3 cup chia seeds

  • 2 tbsps cocoa or cacao powder

  • 1 tsp vanilla extract

  • ⅛  tsp sea salt

  • Optional: 2-3 tbsps maple syrup for sweetness

  • Toppings: Strawberries and dark chocolate

Method:

  1. Add all ingredients to a large bowl and whisk together until well combined.

  2. Leave out at room temperature for one hour and then transfer the mixture to the fridge.

  3. Pour into glasses or container and top with chopped strawberries and dark chocolate pieces.
