Detox Superfood Salad

Looking for a delicious and nutritious summer salad? Look no futher! This superfood salad is loaded with gut loving ingredients but is tasty enough that no one will even know it’s healthy, too!

This salad is similar to a coleslaw but with a vinegar and oil based vinegrette. It is both savoury and sweet and I find it pairs best with bbq meats and pork especially.

Ingredients in Superfood Salad

Cabbage

Rich in Indole-3-Carbinol: Cabbage contains a compound called indole-3-carbinol, which plays a critical role in the detoxification of estrogens in the liver. This helps maintain a healthy balance of estrogen, which is particularly beneficial for women with estrogen dominance conditions such as PCOS or fibroids.

Easy Chickpea Salad

Ingredients:

  • 1/2 large green cabbage, shredded

  • 2 carrots, shredded

  • 1 apple, diced

  • 1/4 cup pumpkin seeds

  • 1/4 cup pecans or walnuts, chopped

  • 1/3 cup dates, chopped

Dressing

  • 3 tbsps olive oil

  • 2 tbsps red wine vinegar 

  • 1 tbsp maple syrup

  • 2 tsp Dijon mustard

Method

  1. In a large bowl, add in all salad ingredients.
