Easy Chickpea Salad
Need a quick and easy high protein lunch idea? Well look no further! This is one of my favourite go to meals
that is packed with fibre and protein to help keep you full and fuelled for the rest of the day! Have it by itself with crackers, rolled up in a wrap or stuffed between bread for a satisfying sandwich. I hope you try this simple recipe!
Easy Chickpea Salad
Ingredients:
1 510 ml can chickpeas, drained and rinsed
1 stall of celery, chopped
1/2 red pepper, chopped
2 tbsps of mayo
1 tbsp lemon juice
Salt and pepper to taste
Optional: handful of chopped parsley or green onion
Method:
Mash chickpeas with a fork( it’s okay to leave them a little chunky!) Add the remaining ingredients and mix well. Serve on toast or in a wrap with greens or have on its own!
