Healthy Sugar Cookie Energy Balls

Need a sweet treat in the afternoon to get you through the day but want something with a bit of staying power and prevent blood sugar spikes? Look no further!

These healthy sugar cookie energy balls taste just like sugar cookies and are perfectly balanced with complex carbs from the oats, healthy fats from the almond flour and cashew butter.

Make these yummy sugar cookie energy balls for an afternoon snack or post dinner treat.

Healthy Sugar Cookie Energy Balls

Makes 9 balls

Ingredients:

  • 1 cup oatmeal flour (just blend whole oats in a food processor or blender)

  • 1 cup almond flour (I used blanched, fine ground)

  • 1/8 tsp salt

  • 3 tbsp cashew butter

  • 4 tbsp maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 tsp almond extract (not necessary but make these really taste like sugar cookies!)

  • Sugar for rolling

Method:

  1. In a large bowl mix together oat flour, almond flour and salt.

  2. Pour in cashew butter, maple syrup, vanilla and almond extract. Mix together well using a spatula until a soft dough forms.

  3. Break dough into small one inch pieces and roll into balls with clean hands. Place sugar on a plate and roll the balls in sugar to coat.

Store in refrigerator.
