Pumpkin Pie Smoothie

Yesterday over on Instagram I posted a super yummy healthy pumpkin spice latte but I opened a whole can of pumpkin and barely used any of it for the recipe. I decided to throw it into a smoothie! This was super thick and delicious and topped with granola, it tasted even better than pumpkin pie.

I love smoothies because you can add in so much nutrition and they’re so quick and easy to make. I even have them for lunch if I’m pressed for time or too lazy to cook. I always make sure my smoothies have a combination of protein, carbs, fats and fibre to keep me fuller and satisfied for longer. Nothing is worse than eating a meal and being hungry an hour later!

Smoothies might not sound that great in the winter but this one is loaded with warming spices so you don’t have to wrap yourself in a blanket and sit on the heater while drinking it!

The star ingredients:

Pumpkin: Loaded with vitamins and minerals like vitamin c and e, pumpkin is also a sources of slow released carbohydrates (meaning they won’t spike blood sugar) and provide a healthy dose of fibre, helping to keep you fuller for longer.

Ground flaxseeds: Full of healthy fats and fibre, ground flaxseeds are amazing to add to smoothies to help thicken them.

Protein powder: I almost always add a protein powder into my smoothies to boost the protein content. I am hungry an hour later if I don’t! You could add in greek yogurt or 2 tbsps of hemp hearts if you don’t like protein powder. I love whey protein myself but use whichever protein you like!

Dates: Add a touch of sweetness and also a good source of fibre, magnesium and potassium.

Recipe: Serves 1

Ingredients:

  • 1 cup unsweetened almond milk

  • 1/3 cup pure pumpkin puree

  • 1 scoop vanilla protein

  • 1 tbsp cashew or almond butter

  • 1-2 dates

  • 1 tbsp ground flaxseed

  • 1/4 tsp pumpkin pie spice

  • 2-3 ice cubes

Blend all ingredients in a blender until smooth. Top with granola and an extra sprinkle of pumpkin pie spice!
