Chewy Gingerbread Cookies (G/F)

Nothing says Christmas more than baking gingerbread cookies! These super easy and delicous cookies come together quickly and are made with healthy ingredients like almond and oatmeal flour. They also have no refined sugar, are gluten free and can easily made dairy free by swapping the butter for coconut oil

Make these super easy healthy gingerbread cookies for friends and family this Christmas season.

These cookies make for the perfect holiday treat to enjoy with some hormone healthy hot chocolate, your mid morning coffee or after dinner for a sweet treat. They are not overly sweet and the only sugar used is molasses and maple syrup.

Healthy Chewy Gingerbread Cookies

Ingredients:

  • 1.5 cups blanched almond flour

  • 1 cup oat flour (just blend rolled oats in a blender until a fine four)

  • 1 1/2 tsps baking powder

  • 2 tsps ginger

  • 1 tsp cinnamon

  • 3 tbsp melted salted butter (or coconut oil)

  • 1 egg

  • 1 tsp vanilla extract

  • 1/4 cup fancy molasses

  • 1/4 cup maple syrup

  • Coconut or turbanado sugar for rolling

Method:

  1. Preheat over to 350 F and line a baking sheet with parchment paper.

  2. In a mixing bowl, comvine the almond flour, oat flour, baking powder, ginger and cinnamon. Mix well to break up any clumps.

  3. Add in the butter, egg, vanilla, molasses and maple syrup. Mix again until well combined.

  4. Refrigerate batter for 10-15 minutes.

  5. Roll the dough into even balls and roll in sugar. Place on baking sheet and press down lightly with the palm of your hand.

  6. Bake for 12 minutes, cool and enjoy!
