No Bake Brownie Bars

These no bake brownie bars make the perfect afternoon sweet treat or dessert.

Made with nutricious ingredients like dates, oats, almond flour and almond butter, these yummy little bars pack in a ton of nutrients.

These brownies are no bake, meaning all you have to do is throw all the ingredietns into a food processor, blend and there you have it! A delicious little treat. These pair perfecrtly with a cup of coffee or tea.

Ingredients and Substitutions in No Bake Brownie Bars

These brownie bars are gluten, dairy and refined sugar free.

  • Dates: Soft medjool dates add a caramel like flavour and are packed with minerals like potassion and magnesium. If you don’t have dates, you can sub 1/4 cup maple syrup and cut back on the amount of water added to soften the dough.

  • Oat flour: Oat flour adds a nice soft texture to these bars without being too dense. Oats are a great source of fibre and complex carbohydrates for energy.

  • Almond flour: I wanted a smooth texture for my brownies so I opten for almond flour. If you don’t have almond flour, any whole nuts will work but the dough will be chunkier. You can swap the almond flour for whole almonds, walnuts or cashews. Nuts add lots of healthy fats and protein, making this a great option for a snack.

  • Almond butter: Nut butter adds in a creamy, fudgy like texture. Feel free to use any nut butter you have on hand. Peanut butter would be amazing in this recipe but would obvisouly change the flavour.

  • Almond extract: I love adding in almond extract to my baking and even my hot chocolates in the cooler months. It adds a rich flavour but you could also sub vanilla extract if you don’t have any.

  • Cocoa powder: Adds a rich chocolately flavour. If you want the health benefits opt for cacao vs cocoa powder.

Storing Your No Bake Brownies

I personally like to keep my brownie bars in the freezer. It makes for a perfect cold treat. They will be a bit harder if kept in the freezer so if you prefer them on the softer side, store them in the refigerator.

No Bake Brownie Bars

Ingredients: Makes 8 bars

For the bars:

  • 1 cup medjool dates

  • 1 cup oat flour

  • 3/4 cup almond flour

  • 1/4 cocoa powder

  • 1/8 tsp salt

  • 2 tbsp almond butter 

  • 1/4 tsp almond extract (can sub vanilla)

  • 2 tbsp water 

For the topping:

  • 1 oz dark chocolate (about 1/3 of a bar or 1/4 cup chocolate chips)

  • 1 tsp coconut oil

  • Coconut flakes and sea salt for topping 

Method:

  1. Add all ingredients for the bars to a food processor and blend until it reaches a dough like consistency. Add more water if you are having trouble blending, being careful not to add too much.

  2. Line a bread pan with parchment paper. Pour mix into pan and press down (about 1/4 inch thickness). Smooth out the top. Put aside.

  3. Add dark chocolate and coconut oil to a small microwaveable dish and microwave for 30 seconds. Stir and microwave again for 20 seconds. Stir or whisk until chocolate is smooth.

  4. Pour chocolate over dough and smooth out with a spoon or spatula so it is even.

  5. Sprinkle with with coconut flakes and sea salt. Freeze for 2 hours and cut into bars before serving. Store in the freezer or refrigerator.
