Peanut Butter Chocolate Chip Blondies (GF/DF/Vegan)
I have the worlds biggest sweet tooth and I probably have a treat pretty much every day like dark chocolate, healthy hot cocoa or a treat like these chickpea blondies. You can't even tell they are made with chickpeas and have no flour in them! These guys are refined sugar free and full of healthy fats and protein so you could even eat them for breakfast if you wanted to. I left out the baking powder and baking soda and made cookie dough the other day and it was amazing. It's also yummy swirled into greek or coconut yogourt, mixed into oatmeal or just straight up eaten with a spoon!
Ingredients:
1 540 ml can chickpeas, rinsed and drained
1/3 cup maple syrup
1/2 cup peanut butter
1 tbsp coconut oil
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1 tsp vanilla extract
pinch of sea salt
1/2 cup dark chocolate chips or chopped bar
Method:
Add all ingredients except for chocolate chips into food processor and blend until well combined. You don't want any lumps! Stir in half a cup of dark chocolate chips. Pour into a greased 8' by 8' brownie pan and bake for 30 minutes or until a toothpick comes out clean.
For cookie dough: Omit the baking powder and baking soda and eat with a spoon!
